Italian Herb Turkey Burger with Sautéed Eggplant & Orange Side

Ingredients
Protein
4 oz ground turkey breast, formed into 1 patty
Required Vegetable (4 oz)
4 oz eggplant, sliced into ½-inch rounds
Fruit (4 oz — on the side)
4 oz fresh orange segments
Free Vegetables (do not count toward 4 oz vegetable)
Large romaine lettuce leaves (for wraps)
Tomato slices
Fresh basil leaves
Red onion rings
Seasonings
1 tsp Italian seasoning (or equal parts basil, oregano, and thyme)
½ tsp garlic powder
½ tsp onion powder
Pink Himalayan salt to taste
Black pepper to taste
Splash of red wine vinegar
0-calorie cooking spray
Instructions
Season the patty. Mix ground turkey with Italian seasoning, garlic powder, onion powder, salt, and pepper. Form into a patty.
Cook the eggplant. Spray a skillet with 0-calorie cooking spray over medium-high heat. Cook eggplant rounds 3–4 minutes per side until golden and tender. Season with salt and a splash of red wine vinegar. Set aside.
Cook the burger. In the same skillet, re-spray and cook the turkey patty 5–6 minutes per side until cooked through (165°F internal).
Assemble. Wrap the patty in romaine lettuce leaves. Top with tomato slices, fresh basil, and red onion rings.
Serve with sautéed eggplant and fresh orange segments on the side.
Notes
Classic Italian herb flavors — the basil, oregano, and thyme blend makes this taste like a Tuscan kitchen.
Lettuce, tomato, basil, and red onion are all free vegetables and don't count toward the 4 oz requirement.
Eggplant gets beautifully caramelized when sautéed — meaty and satisfying.
